HACCP for the first time quoted the concept of risk management in food safety management through the analysis of the whole process of food production, to find out the potential biological, physical and chemical hazards of products. HACCP can help to reduce the food safety risks by formulating corresponding control standards, methods and emergency measures.

HACCP internal auditors should carry out internal audit according to the internal audit procedures, improve the food safety management established by the enterprise, and promote the improvement of process control.

Since 1990, the research on the application of HACCP in food processing industry has been started in China. By means of pilot research, the food hygiene supervision agency has achieved remarkable results in the control of yogurt and meat products. After more than 30 years of promotion, HACCP management system has been widely applied in food production enterprises and food business.
